<p><strong>Zagreb Wine Gourmet Weekend </strong>novi je internacionalni festival vina i hrane koji će se <strong>od 13. do 15. travnja 2012</strong>. održati u prostorima <strong>Gliptoteke HAZU</strong> u Zagrebu.</p>
<p>Nastavlja tradiciju Zagreb Wine Gourmet Festivala koji je tijekom protekle 4 godine postao jedno od najvažnijih eno-gastro događanja u regiji. Novost je uključivanje Digitel grupe, vodeće grupacije za marketinšku komunikaciju u regiji, uz uhodanu ekipu Zagreb Wine Gourmet Festivala.</p>

<p>Novi prostor održavanja Zagreb Wine Gourmet Weekenda – Gliptoteka HAZU , građevina iznimne povijesno –kulturološke vrijednosti, prirodno je mjesto održavanja festivala. ZGWGW nastavlja tradiciju internacionalnog festivala na kojem će se domaći ljubitelji vina upoznati s pomno odabranim stranim vinima i vinarima, ali i upoznati s najnovijim berbama značajnih domaćih vinara. Novost je prateći, zabavni program za koji je zadužena agencija Pepermit, koja se može pohvaliti organizacijom najvećeg regionalnog medijskog festivala Weekend Media Festivala.</p>
<p>Svoj dolazak su najavili brojni svjetski i domaći stručnjaci, koji će sudjelovati u mnogobrojnim panel raspravama, predavanjima i degustacijama.</p>

<p>Evo malo slika s jedne večere kod mog dragog frenda Igora..</p>
<p>Njegova jela i ideje su mi često triježnjenje od mojih suludih želja da napravim nešto a la Heston, Herme, Galvagno, Roux,  i slično, jer nemam ta znanja, nemam tu tehniku, te namirnice, i na kraju, zar je smisao da savršeno &#8221;skinem&#8221; nekog od njih&#8230;</p>
<p>Igorova jela su jednostavna, a perfektna&#8230; vrlo su ukusna, izbalansirana, vesela i ono najvažnije, zaista su užitak dok ih jedete&#8230; Ovakvi su kuhari moj poticaj da si i dalje plačam razne tečajeve i školovanja o kuhanju, o vinima, da naručujem knjige, da putujem zbog hrane ili vina&#8230;</p>
<p>On me stvarno inspirira.</p>

<p>Prije mjesec dana sam drugi put bio i potvrdio svoje mišljenje o restoranu Bel Soggiorno u San Gimignanu&#8230;</p>
<p>Hrana je oba puta na vrlo visokoj razini.. fantastičan pogled (jer jedna strana restorana je u staklu, i za za toplijih dana otvorena) prema brdima i vinogradima.. tjestenine su kao i deserti bili fantastični..preporučam i jela od divljači (vepar..)..nažalost nikako ne mogu naći slike i tog jela..</p>

<p>Vinska lista je bazirana na lokalnim bijelim vernacciama koje su odličan odnos cijena-kvaliteta, dosta je Chiantija (ipak smo u Toskani),  Brunella, super-toskanaca&#8230;</p>
<p>O San Gimignanu sam već ranije pisao (tema je bila lokalna sorta Vernaccia di San Gimignano), pa ovaj put samo kratko o restoranu..više u slikama..</p>

<p>Radionica je održana 26.11.2011. u zagrebačkom hotelu Regent Esplanade u sklopu 6. međunarodnog festivala vina i kulinarstva.</p>

<p>Cilj radionice bio je prezentirati domaće autohtone proizvode i njihove proizvođače kao i stare užance spojene s visokom gastronomijom u Istri.<br />
Predstavili smo i Udrugu URRIS &#8211; <strong><em>Udruga ruralnog razvoja istarskog sela</em></strong> te njihove članove kao i dio proizvoda s kojima su na tržištu.</p>
<p>Zbog vrlo kratkog vremenskog termina, pravu atmosferu na školi kuhanja osjetite u samoj Stanciji 1904. u Smoljancima. Prema etabliranom gastronomskom časopisu Gourmet, škola kuhanja Stancija 1904 proglašena je 47. na svijetu!</p>
<p><strong>Naš <em>menu</em> izgledao je ovako</strong>:</p>
<p>1.Tradicionalno piće dobrodošlice u Istri: biska, ruda, medica (obitelj Štifanić iz Praščari pored Višnjana) + kroštule</p>
<p>2. Domaći kruh sa lavandom (sorta Masted) proizvođač Stancija 1904.</p>
<p>3. Maslinovo ulje obitelji Ipša iz Ipši kraj Livada (prema najvažnijem vodiću za extra djevičanska maslinova ulja &#8211; Flos olei (La Guida all&#8217;Extravergine), obitelj Ipša uvrštena je u top 15 na svijetu!)</p>
<p>4. Ovčji sir sa orasima i paprom OPG Sia iz Vodnjana</p>
<p>5. Zlatna istarska malvazija agroturizma Štefanič iz Kaldira pored Motovuna</p>
<p>6. Istarski fuži sa svježim bijelim tartufom obitelji Karlić iz Paladini i ekstra djevičanskim maslinovim uljem šampionom Mediterana iz Agroturizma Montižel kraj Završja &#8211; obitelji Pinzin. Prije mjesec dana u Veroni proglašeno najboljim u kategoriji srednje voćnosti, u konkurenciji od 3650 ulja iz 42 države.</p>
<p>7. Torta od kravlje skute Stancija 1904. Smoljanci. + domaća marmelada od trešanja OPG Štefanić iz Kaldira pored Motovuna<br />
+ Muškat Momjanski OPG Sinković iz Momjana, Agroturizam San Mauro.</p>

<p>Izložbeni dio festivala otvara vrata <strong>25. i 26. studenog.</strong></p>
<p>Sadržaj festivala bit će obogaćen vođenim radionicama, okruglim stolom, humanitarnom večerom i posjetom međunarodnih novinara Istri.</p>

<p>Radionice s najboljim godištima vina proteklog desetljeća po prvi put u Hrvatskoj održat će dvije ugledne vinarije iz Bordeauxa &#8211; Château Clinet i Château La Dominique .</p>
<p>Šesti Međunarodni festival vina i kulinarstva u Zagrebu od 24. do 26. studenog okupit će ugledne hrvatske i međunarodne vinare te okruglim stolom, nizom radionica, humanitarnom večeri i drugim popratnim događanjima učvrstiti ugled jednog od središnjih mjesta susreta profesionalaca, stručnjaka i zaljubljenika u gastronomiju. Na današnjoj konferenciji za medije, najavljeno je kako festival svoja vrata za posjetitelje otvara 25. i 26. studenog u prostorima <strong>hotela The Regent Esplanade</strong>, dok će se vezane aktivnosti dogoditi i u danima koji prethode izložbenom dijelu.</p>

<p>Međunarodni festival vina i kulinarstva u cijelosti je posvećen kulturi stola kao nezaobilaznom dijelu gospodarstva i jednoj od vodećih ponuda hrvatskog turizma. Temeljem već pristiglih prijava, kao i interesa proteklih godina, očekuje se rekordna nazočnost izlagača, njih više od <strong>230</strong>, što festival čini najvećim dosad. <strong>Uz domaće vinare, očekuje se dolazak proizvođača iz Francuske, Italije, Slovenije, Srbije, Bosne i Hercegovine, Makedonije, Španjolske i Crne Gore dok će mnogi biti zastupljeni putem uvoznika.</strong> Na prestižnoj lokaciji hotela The Regent Esplanade okupit će se &#8211; uz vinare &#8211; i vodeći proizvođači hrane, maslinovih ulja, tartufa, sireva, pršuta i meda, koji će predstaviti svoje proizvode i gastronomsku ponudu.</p>

<p>Kako bi posjetiteljima omogućio što više zanimljivog sadržaja, predviđen je niz atraktivnih radionica i eno-gastro edukacija s vrhunskim hrvatskim i međunarodnim vinima i vinarima. Riječ je o događanjima osmišljenima za poslovne ljude, trgovce, sommeliere, ugostitelje, ljude iz javnog života, ali i za ljubitelje vina i hrane koji se amaterski zanimaju u gastronomiji. U tri odvojena prostora &#8211; <strong>restoranu Zinfandel</strong>, <strong>prostoru casina te na Oleandar terasi</strong> – održat će se radionice s domaćim i međunarodnim vinarima, gastro blogerima, udrugama posvećenima gastronomiji te organizacijama vezanima uz turizam i gastronomsku ponudu.</p>
<p>Među radionicama se ističe dolazak predstavnika dviju uglednih vinarija iz Bordeauxa – Château Clineta i Châtea La Dominiquea. Smješten u apelaciji Pomerol, Château Clinet se danas, u svjetskim razmjerima, smatra jednom od ključnih vinarija desne bordoške obale. Predvođena karizmatičnim i mladim Ronanom Labordeom, vinarija je pažnju javnosti zaokupila u posljednjih 15 godina te proizvodi neka od najatraktivnijih vina regije. Vinograd veličine 9 hektara proizvodi koncentrirana i bogata, ali istodobno i balansirana vina koja se i kvalitetom i cijenom danas uspoređuju s proizvođačima poput Petrusa, Lafleura i Le Pina. Vinarija će u Zagrebu predstaviti svoja vina Ronan, Le Fleur de Clinet te Château Clinet najboljih bordoških godišta &#8211; 2000., 2005. i 2008. Château La Dominique je Grand Cru Classé vinarija iz St. Émiliona, smještena na granici s apelacijom Pomerol i naslonjena na vinograde kultne vinarije Cheval Blanc. Vinarija će u Zagrebu predstaviti cjelokupni izbor svojih vina, koji uključuje Château La Dominique, Château Fayat te Château Clement Pichon. S obzirom na terroir i kvalitetu vina, te i dalje izuzetno povoljnoj cijeni, riječ je o vinariji kojoj stručnjaci predviđaju ubrzan rast i razvoj sljedećih godina.</p>

<p>Tako ga je nazvala moja draga frendica Nina. Puno mu je ime i prezime <strong>čokoladni ganache gel s pohanim čokoladnim truffles-ima s coulis-om od višanja, čokoladnim mrvicama i kristalima magic sugar-a i arome višnje</strong>. <p>Za izradu ovog deserta trebalo mi je cca 4-5 sati. Naravno ako imate šoker (za extremno brzo hlađenje/zamrzavanje slastica) i slične uređaje, i ako si dobro organizirate tok izrade trebat će vam nešto manje. Prvi dan sam radio (cca 3 sata), čokoladni gel, truffles-e, i hrskavu dekoraciju, te ostavio preko noći da se hladi. Coulis i samo pohanje bi bilo naj idealnije napraviti prije posluživanja da bude svježe.</p>
<p>Osnova recepta  bio je <strong>desert Petre Jelenić (<em>Čokolada sa čokoladom na čokoladi i maline</em>)</strong> koji je radila u svibnju u jednoj od epizoda <strong>Masterchefa</strong> (kad je Nastasja dobila isti broj bodova), s time da sam ga malo mijenjao. S obzirom da se sweet &amp; sexy Nastasja čudila ganacheu, agar-agaru i sličnom ko kokoš jajetu fascinantno je da je tako odlično napravila ovaj ne prejednostavan desert.</p>
<p>Uglavnom, ovo je za freekove i čokoladne ovisnike. <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  Desert je famozno ukusan. Ganache je gelasto-mousseaste teksture, nježan, dok je truffle više kao gušći i tvrđi ganache. Višnje svojom kiselošću stvaraju balans s čokoladom, iako, s obzirom koliko čokolade ima, desert nije presladak.</p>

<p><strong>Desert se sastoji od 5 elemenata; ganache gel, truffles koji se kasnije poha u novoj truffle smjesi i pjenušcu, čokoladne mrvice (iliti čokoladna zemlja), coulis od višanja i dekoracija od Magic sugar-a, plus višnje za dekoraciju. </strong>Pa krenimo redom.</p>
<p><strong><em>Čokoladni ganache gel</em></strong></p>
<p>375 g čokolade 72% kakaa (belgijska čokolada u granulama)</p>
<p>1 list želatine</p>
<p>50 g vode</p>
<p>100 g šećera</p>
<p>1 mala žličica agar-agar praha (obično se koristi samo želatina ili samo agar-agar, ali i sam sam htio probati ovakvu kombinaciju)</p>
<p>50 g glukoze ( koristio sam tekuću, ali možete i u prahu. Najbolje ju je kupiti u apoteci, ima je i u dm-u)</p>
<p>900 g vrhnja za šlag</p>
<p>2 g soli</p>
<p>1 mahuna vanilije</p>
<p>Pripremiti plitki četvrtasti kalup obložen folijom (olakšava rezanje). Želatinu namočiti u hladnu vodu (ta voda nije uključena u recept). Agar-agar prah namočiti sa 50 g vode. Čokoladu usitniti. Vrhnje zagrijavati i u toplo dodati namočeni agar-agar prah, šećer, glukozu, srž vanilije i sol. Kad zakipi kuhati pola minute i maknuti sa vatre, dodati ocijeđenu želatinu, pomiješati da se želatina otopi, pa preliti preko čokolade. Pustiti da se čokolada malko otopi pa lagano miješati kako bi dobili homogenu smjesu. Dobivenu smjesu staviti u pripremljeni kalup i staviti u hladnjak da se stisne.</p>
<p><strong><em>Truffles od tamne čokolade</em></strong></p>
<p>150 ml slatkog vrhnja</p>
<p>250 g sjeckane čokolade 85% kakaa (Može i s manjim postotkom kakaa. Htio sam dobiti razliku u boji i teksturi s obzirom na čokoladni gel)</p>
<p>50 g omekšalog maslaca</p>
<p>150 g prženih i sitnije drobljenih badem listića (možete i obične bademe ili lješnjake kratko tostirati pa usitniti u mužaru)</p>
<p>Slatko vrhnje kuhati dok ne zakipi, preliti preko sjeckane čokolade. Pustiti da se malo otopi i miješati dok se ne dobije homogena smjesa. Na kraju umiješati maslac.<br />
Dobivenu smjesu preliti u plitku posudu i spremiti u hladnjak da se što prije ohladi. Pomoću dresir vrećice ohlađenu smjesu špricati na masni papir u hrpice veličine oraha. Ohlađene i stisnute hrpice oblikovati u kuglice i uvaljati u badem listiće. Truffles čuvati u hladnjaku do pohanja. Oblikujte ih prema želji, kao &#8221;tartufe&#8221; ili npr. stožasto, kako već želite.</p>

<p><strong><em>Coulis od višanja</em></strong></p>
<p>300 g višanja</p>
<p>30 g šećera</p>
<p>1 velika žlica glukoze</p>
<p>1 žlica rakije od višanja</p>
<p>Višnje, šećer, rakiju i glukozu zagrijavati do točke vrenja, maknuti sa vatre, pustiti da se ohladi. Usitniti štapnim mikserom te propasirati na fino sito. Prema želji možete ga uvijek malo razrijediti vodom, sirupom, sokom, i slično. Coulis ćete na tanjuru najlakše razmazati širokim slastičarskim kistom. Željenu gustoću uvijek možete postići reguliranjem vode. Ja volim nešto gušću strukturu jer okus ostaje intenzivniji i lakše se razmazuje po tanjuru. Jedan dio coulis-a sam ostavio za &#8221;sisaljke&#8221; kojima možete dodatno u svakom trenutku kapati po desertu.</p>
<p>Umjesto višanja možete koristiti i maline, crveni ribiz i slično &#8221;kiselkasto&#8221; voće, jer je cilj da ta kiselost napravi ravnotežu s obiljem čokolade.</p>

<p><strong><em>Čokoladne mrvice (čokoladna zemlja)</em></strong></p>
<p>80 g hladnog maslaca</p>
<p>10 g kakao praha</p>
<p>10 g mljevene kave (koristio sam Mokarabiu)</p>
<p>10 g čokolade u prahu</p>
<p>95 g brašna</p>
<p>85 g šećera u prahu</p>
<p>malo soli (koristio sam plavu perzijsku sol – meni najbolja sol kod izrade slastica)</p>
<p>Brašno sa šećerom u prahu, fino mljevenu kavu, čokoladu u prahu i kakao u prahu prosijati, dodati sol i kockice maslaca, prstima trljati maslac u brašno dok smjesa ne postane mrvičasta. Sipku smjesu rasporediti na lim za pečenje obložen masnim papirom i peći na 180°C. Dobit ćete nešto kao &#8221;tvrđi čokoladni biskvit&#8221;. Pečeno ohladiti i miksati u fine mrvice.</p>
<p><strong><em>Hrskava dekoracija od Magic sugar-a i višanja</em></strong></p>
<p>150 g Magic sugar</p>
<p>5 g vode</p>
<p>1 žličica arome višnje</p>
<p>Magic sugar se topi na 180°C. Čim se otopi stavite aromu višnje i malo vode i brzo miješajte. On se vrlo brzo zgušnjava i sve treba raditi vrlo brzo i dobro pripremljeno (iako, možete ga opet i stvrdnutog otopiti bez problema). Imajte već pripremljenu ili silikonsku podlogu za slastice ili možete okrenuti pleh za pečenje, lagano ga premazati uljem, te po njemu isipajte šećer koji se počeo zgušnjavati. Silikonskom lopaticom lagano razmazujte dok ne osjetite da se počinje hladiti i sve jače zgušnjavati. Ovo kratko traje. U blizini pleha imajte pripremljen masni papir na kojem ćete raditi oblike kakve želite dobiti hlađenjem Magic sugar-a. (npr. mrežice, stepenice, cvijet..). Stavite u frižider, te kasnije pažljivo odvojite s masnog papira i dekorirajte kolač. Dio koji nisam koristio sam usitnio u blenderu da dobijem kristalne mrvice.</p>

<p><strong><em>Smjesa za pohanje truffles-a</em></strong></p>
<p>250 g brašna</p>
<p>50 g kakao praha</p>
<p>50 g šećera</p>
<p>250 ml pjenušca</p>
<p>50 g maslaca</p>
<p>2 jaja</p>
<p>sol</p>
<p>cca 0,6 L biljnog ulja</p>
<p>Maslac otopiti. Brašno prosijati sa kakaom, šećerom i solju. U brašno umiješati razmućena jaja i pjenušac te na kraju umiješati maslac. Kad su svi elementi gotovi pripremiti ulje za pohanje truffles. Ulje zagrijati. Hladne truffles uvaljati u smjesu za pohanje i pržiti u vrućem ulju. Pržene vaditi na papirnate salvete da upiju višak masnoće.</p>
<p>Oko truffles-a će se napraviti hrskava ovojnica, koju kad &#8221;probijete&#8221; polako iscuri truflle. Pohanje će dati i malo gorčine, pa pokušajte napraviti par komada i probati kako vam se sviđa..</p>

<p>Ovo je malo izmijenjen recept <em><strong>chefa</strong></em><strong> </strong><strong>Damira Modrušana</strong> (koliko znam sada bivši chef iz restorana <strong>Zigante</strong> u Livadama). Umjesto originalno korištene muškatne rakije koristio sam medicu, umjesto tartufa sam koristio extra djevičansko maslinovog ulja s aromom bijelog tartufa, te sam i neke mjere malo izmijenio.</p>
<p>Ovaj spoj čokoladne kreme i ulja s aromom tartufa odlično parira umaku od medice i čaja od kamilice. Sezona Tuber magnatum pico tj. bijelog tartufa uskoro počinje, pa se nadam još ponekoj kombinaciji, ali ne s uljem, već pravim tartufima.</p>

<p>Dobro rashlađen Leonardo 2005. Marjana Simčiča izvrsno je zaokružio okuse.</p>

<p>Za 4 osobe</p>
<p><strong>Sastojci:</strong></p>
<p><em>Za njoke:</em></p>
<p>200 g krumpira (cca 2 komada srednje veličine)</p>
<p>70 g brašna (kako mi se tijesto činilo malo mekano dodavao sam još brašna, oko 30 g)</p>
<p>1 žumanjak</p>
<p>1 žlica maslinovog ulja s aromom bijelog tartufa</p>
<p>malo soli (koristio sam plavu perzijsku, može i obična)</p>
<p><em>za punjenje njoka:</em></p>
<p>100 g crne čokolade (70% kakaa)</p>
<p>30 g slatkog vrhnja</p>
<p><em>preljev za njoke:</em></p>
<p>40 g maslaca</p>
<p>1 žličica kakaa u prahu</p>
<p>1 žlica smeđeg šećera</p>
<p><em>za umak:</em></p>
<p>1 vrećica čaja od kamilice</p>
<p>20 ml medice</p>
<p>1 žumanjak</p>
<p>1 žlica šećera (bijelog)</p>
<p><strong>Postupak:</strong></p>
<p>Kuhani krumpir protisnite kroz ručnu pasirku. Stavite ga zatim sa strane da se ohladi.</p>
<p>Dodajte brašno, žumanjak, ulje od tartufa i malo soli te umijesite tijesto. Tijesto razvaljajte i širom čašom oblikujte krugove. Kasnije će te na sredinu staviti žlicom čokoladnu smjesu i oblikovati kuglice.</p>
<p>Crnu čokoladu rastopite na pari. Zagrijte slatko vrhnje i umiješajte ga u čokoladu kako bi ste dobili gustu smjesu. Dodajte par kapi ulja s aromom bijelog tartufa, te pustite da se ohladi.</p>
<p>Njoke kuhajte u slanoj kipućoj vodi dok se ne dignu na površinu.</p>
<p>U vrućoj tavici rastopite maslac, dodajte smeđi šećer i kakao u prahu. U tako gotovu smjesu stavite kuhane njoke i lagano ih promiješajte kako bi dobili boju.</p>
<p>Na pari istucite žumanjak i šećer. U drugoj posudi skuhajte čaj od kamilice u medici te toplo ulijte pa istucite u čvrstu pjenastu kremu.</p>
<p>Njoke stavite na tanjur, prelijte toplom kremom, i poslužite toplo.</p>
